When Apple is signing a particular firmware, you can upgrade or downgrade to it freely. However, when Apple stops signing it, you can’t do anything to install it on your devices, in this case, the iPhone and iPad.
Today, Apple has stopped signing iOS 18.0.1 and iPadOS 18.0.1 for iPhone and iPad. If you were looking forward to downgrading from iOS 18.1 and iPadOS 18.1, you are out of luck as the signing window has been closed.
Why you want to downgrade to older firmware is entirely your choice, but it’s always a good idea to install the latest and greatest update to ensure stability. New updates are particularly important since they are packed with security patches, too.
